Why it pays to book your lechon early

72 hours is the lead time we recommend. It is not the lead time we prefer.

What booking early actually holds

A roasting slot. This is the whole of it. We roast every pig to order, and there is only so much we can roast in a given window — the pit is the limit, not the supply of pigs. Book early and your date and your size are held against that day's capacity. Leave it late and you are asking for whatever is left.

It is not that larger sizes sell out faster. It is that a day fills up, and once it is full it is full.

The part worth knowing

If our prices go up after you have ordered, your price does not change. You keep the price you booked at.

That matters most towards the end of the year, because December sometimes carries a price increase. Order in September for a December delivery and you pay September's price. There is no version of booking early where you lose by it.

How early is early?

Weeks is good. Months is better, and perfectly normal for a wedding or a Christmas party. There is no booking window we consider too far out.

December

There is no cut-off date for December orders or deliveries. We keep taking them.

What we cannot promise is that a particular day will still be open, and we may announce at any point that slots for a date are full. That is the only reason to hurry — not a deadline on the calendar, but a pit that can only hold so much at once.

Still want it next week?

That is fine too — 72 hours is the recommendation and shorter notice is often possible. It comes down to whether your size is still free and what else is going out that day. Ask and we will tell you straight.
